I cooked dinner again tonight!

But failed to take a picture as we were in a rush to get to our trapeze class (!)

I made whole-wheat spaghetti with sausage, asparagus, sun-dried tomatoes and garlic. I based it on this recipe, but used spaghetti instead of orecchiette, asparagus instead of broccoli, and I forgot to add the lemon juice. I also didn’t do the weird water thing like the instructions on that site say to do.

To be honest, even though the others said they really liked it, I myself was not a fan…I found it a bit tasteless, which may have been solved by adding lemon juice and more salt, but overall it was VERY oily. Much too oily. And because of that, I presume it was quite calorific. The sausages, albeit half-fat, and oily sun-dried tomatoes probably didn’t help with easing up on the calories. Ah, well. It sounded like a delicious recipe, and it was definitely enjoyed, but I feel like I didn’t quite do it justice.

If you try this out (the recipe is linked above) let me know how it goes! Also, if you do plan on trying this recipe, but would like to substitute the broccoli for asparagus, here is how I cooked it:

  1. Add 1/2 cup of water and 1 tbsp. EVOO to a heated pan.
  2. Add in asparagus heads (snap off the bottoms beforehand) and shake/toss pan.
  3. Cook on medium heat until color of asparagus is significantly brighter. This should take 3-5 minutes.
